BONE BROTH RECIPE

In these cold months (or always), homemade bone broth is warming, hearty, and healing. When you have access to the best grass-fed beef bones in Washington from Snohomish Hay + Cattle, it is truly out of this world. Picked these bad boys up less than an hour ago and in about two hours, with the help of some fresh veg and aromatics, my Instant Pot is going to gift me with life affirming (I'm not being dramatic!) broth. Here's how:

2.5 pounds of bones
2 carrots, roughly chopped
1 med onion, peeled and chopped
2 stalks of celery, chopped
7 cloves of garlic, smashed
2 T kosher salt
2 bay leaves
2 tsp whole peppercorns

Chuck it all in the pot, fill it with water (just enough to cover the bones but no more than 2/3 full), close it up and set your timer for 2 hours. Once the timer goes off, let pressure release naturally and then strain carefully and enjoy! You can freeze it in cubes, sip it, or use it for stews and soups!
